BUDGET MACARONI AND CHEESE
1 package (7 ounces) elbow macaroni 3 tablespoons butter or margarine 3 tablespoons all-purpose flour ¼ teaspoon salt Dash pepper 1 cup milk 1 cup (4 ounces) shredded cheddar cheese Cook the macaroni according to package directions. Drain; set aside and keep warm.
In a saucepan over mediumlow heat, melt butter. Add flour, salt and pepper; stir to make a smooth paste. Gradually add milk, stirring constantly.
Heat and stir until thickened. Remove from heat; stir in cheese until melted. Pour over macaroni and mix well. Yield 4 servings.
INDIVIDUAL MEAT LOAVES
1 can (5-ounce) evaporated milk 1 egg, lightly beaten ¾ cup quick-cooking oats ¼ cup chopped onion 1 teaspoon salt ¼ teaspoon pepper 1 ½ pounds ground beef 1/3 cup ketchup 1 tablespoon brown sugar 1 tablespoon prepared mustard In a bowl, combine the first six ingredients. Add beef and mix well.
Shape into six loaves, about 4 in x 2-1/2 inch. Place in an ungreased 13inx9inx2in baking dish.
Combine ketchup, sugar and mustard; spoon over loaves.
Bake uncovered at 350 degrees for 35-45 minutes or until a meat thermometer reads 160 degrees and no pink remains. Yields 6 servings.
