Cajun Style Pork Ribs

2 lbs country style pork ribs
2 teaspoon onion powder
1 to 2 teaspoon ground black pepper
2 teaspoon dried thyme leaves
1 teaspoon salt

4 teaspoon paprika
2 teaspoon garlic powder
2 to 2 teaspoon Cayenne pepper
2 teaspoon dried oregano leaves
Fresh herbs for garnish
Place ribs in a shallow dish. Combine all of the spices. Sprinkle over the ribs, coating them evenly on all sides. Let sit for about 15 minutes. Prepare the barbecue coals and when they are evenly white, place the ribs on the rack about 6 inches above the heat. Cover with barbecue lid. Barbecue over moderately slow coals for 35-45 minutes, turning the ribs often. Cut ribs along the bones. Garnish with fresh herbs, if available. Serve hot. Makes 4 servings.
