Diabetic Fruit Crisp


3 cups sliced apples

1/2 cup oatmeal

1/2 cup whole wheat flour

3/4 teaspoon nutmeg

2 Tablespoons reduced calorie margarine

1 -16ounce can juice packed peaches

3/4 teaspoon cinnamon

3/4 teaspoon Cornstarch

Nonstick vegetable cooking spray

Lightly coat a 9 x 9 inch baking pan with vegetable spray. Put apples and peaches in pan along with the peach juice. In a separate bowl, combine oats, flour, cinnamon, nutmeg, cornstarch, and margarine. Stir half of mixture into fruit. Sprinkle remainder of the dry mixture over top of the fruit and bake at 375 degrees for 30 minutes. Yield: 6 3/4 cup servings.
