Peppered Hamburgers
1 1/4 pound ground beef
1 1/2 teaspoon salt
1 green pepper, cut in rings
1 red pepper, cut in rings
6 Tablespoons cola beverage
3/4 Tablespoon flour
1 onion sliced
1 teaspoon paprika
1 egg yolk
1/2 teaspoon pepper
Butter
Combine ground beef, salt, paprika, pepper, egg yolk, cola beverage and flour; mix well. Chill for about 1 hour. Saute onion, green and red peppers in small amount of butter in skillet until soft; remove and set aside. Shape beef mixture into thick patties; cook in skillet until done and browned. Top with onion mixture; serve.
Potato Burgers
1 large potato
1 pound ground beef
1 15oz. can tomato sauce
1 medium onion
1 egg
Salt and pepper
Grate potato and onion; mix well with ground beef, salt, pepper and egg. Roll into burgers.
Brown in skillet with just enough shortening to keep burgers from sticking. Pour tomato sauce over burgers; simmer until done. Serve with your favorite vegetables.
Quick Beef Stew
2-2 1/2 cup up cooked beef (about 1 pound)
3 medium potatoes, pared and cut into 1 1/2inch pieces
3 Tablespoon flour
4 medium carrots, cut into 2 1/2 inch strips
1 cup sliced celery
1 envelope onion soup mix
2 1/4 cup water
Mix all ingredients in 2 1/2 quart microwave casserole dish. Cover and microwave on high to boiling, 10 to 12 minutes; stir. Cover and let stand 5 minutes. Microwave until vegetables are tender, for 10 to 12 minutes, stirring every 5 minutes.
