Macaroni and Cheese Casserole
1 1/2 cups uncooked elbow macaroni
1/2 stick butter or margarine
2 tablespoon flour
2 cups milk
2 tablespoons mustard (yellow or Dijon)
8 ounce cream cheese, cubed
12 ounces Velveeta cheese, cubed
Salt and pepper to taste
2 tablespoon dried parsley flakes
Crushed Ritz crackers
Preheat oven to 350 degrees. In large saucepan, cook macaroni according to package directions and drain. In medium saucepan melt butter and add flour, stir well. Add milk, mustard, cream cheese, Velveeta, salt and pepper. Stir until cheeses melt and mixture is smooth (you may have to use a whisk to get it smooth). Combine this mixture with cooked, drained noodles. Pour mixture into large, buttered casserole dish. Top with cracker crumbs and bake in oven for 25-30minutes.
 
Cheese Grits Casserole
1 cup cooking grits (prepared as directed)
1 (6 ounce) roll garlic cheese
1 stick butter
2 eggs, beaten
3/4 cup milk
Cook grits as directed on package. Add cubed cheese and butter and stir until blended. Let cool, then add milk and eggs. Pour into 6 cup casserole dish or 9x11 long baking dish. Bake uncovered for 1 hour at 375 degrees.
 
Corn Casserole
1 can cream style corn
1 can whole kernel corn, drained
1 onion, chopped
1 bell pepper,chopped
2/3 cup milk
1 egg, beaten
1 cup cracker crumbs
1 cup grated cheddar cheese
1/4 cup melted butter
2 tablespoon sugar
Mix all ingredients together. Bake in 350 degree oven for 1 hour. Note: This may be made and refrigerated until ready to bake.
 
Florida Cabbage Slaw
1 pound bacon
1 head cabbage
3 medium bell peppers
1 large white onion
4 small salad tomatoes
Worcestershire sauce
Fry bacon and save grease. Cut cabbage, pepper and onion into bite size chunks. Put in a big pot and stir in bacon grease. Put a little salt and pepper in and stir. Put lid on and cook. About 5 minutes before it is to be done, add Worcestershire sauce (as much as you want to taste). When you remove from heat,add quartered tomatoes and crumbled bacon and serve.
