Poppy Seed Chicken
3 cups cooked chicken breasts, chopped
1 can cream of chicken soup
1 can cream of mushroom soup
16 oz. sour cream
2/3 cup milk, a little more of desired
2 teaspoon poppy seed
Salt and pepper
1 cup shredded cheddar cheese
36 saltines, crushed
1-2 tablespoons butter or margarine, melted
Mix chicken, soups, sour cream, milk and poppy seeds together; add salt and pepper to taste. Place half of the mixture in a lightly buttered casserole dish. Sprinkle half of the cheese on top of mixture; repeat. Top with crackers and drizzle with butter. Bake at 350 degrees for 30 minutes; then serve. Can be served on top of white rice or orzo.
 
Creamy Italian Chicken
4 boneless skinless chicken breast halves
1 envelope dry Italian salad dressing mix
1/4-1/3 cup water
8 oz. cream cheese, softened
1 (10oz.) can of cream of chicken soup
1 (8oz.) can mushroom stems and pieces, drained
Place chicken breasts in a slow cooker. Combine dressing mix with water and pour over chicken. Cook on low for 3 hours. Combine cream cheese, soup and mushrooms until mixed. Pour over chicken and cook for an additional 1-2 hours on low or until chicken juices run clear and meat is tender. May serve over pasta or rice. Yield: 4 servings
 
French Dip Sandwiches
1 beef roast (3 pounds)
2 cups water
1/2 cup soy sauce
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon garlic powder
1 bay leaf
3-4 whole peppercorns
8 French rolls, split
Place roast in a slow cooker. Add water, soy sauce, and seasonings. Cover and cook on high for 5-6 hours or until tender. Remove meat from broth; shred with forks and keep warm. Strain broth; skim off fat. Pour broth into small cups for dipping. Serve beef on rolls. Yield: 8 servings.
 
Sloppy Joes
1 pound ground beef
1/2 cup chopped green pepper or celery
1 small onion chopped
8 oz. can (1 cup) tomato sauce
1/2 cup catsup
1 tablespoon brown sugar
1 tablespoon mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon Worcestershire sauce
In large skillet, brown ground beef with green pepper and onion; drain excess fat. Stir in remaining ingredients. Cover and simmer 15-20 minutes, stirring occasionally. Serve over toasted buns. Makes 4-5 servings.
 
Brownie Delight
1 pan brownies
2 small boxes chocolate pudding
1 small cool whip
In large container, break up half of brownies as bottom layer. Mix 1 box pudding according to directions and pour over brownies. Layer with half the cool whip. Repeat layers.
