Farmers Casserole
3 cups frozen shredded hashbrown potatoes
3/4 cup cheddar cheese, shredded
1 cup cooked ham, diced
1/4 cup green onions, sliced
4 eggs, beaten
1 (12 oz.) can evaporated milk
1/4 teaspoon salt
Grease a square 2 quart baking dish. Put potatoes in bottom of dish, then sprinkle with cheese, ham and green onions. Combine rest of ingredients and pour over potato mixture. Refrigerate overnight. Bake uncovered at 350 degrees for 55-60 minutes. Serves 6
 
Pineapple Casserole
1 (20 oz.) can pineapple chunks, drained
2/3 cup sugar 
5 teaspoon flour
1/4 box Ritz crackers, crushed 
1 1/2 cups grated sharp Cheddar cheese
1/2 cup margarine, melted
Place drained pineapple chunks in an 8x12 inch casserole dish. Mix sugar and flour together and sprinkle over pineapple. Cover with cheese, then top with cracker crumbs. Melt margarine and pour over the top. Bake at 350 degrees for 20-30 minutes.
 
7 Can Soup
1-1 1/2 pounds ground chuck
1 small chopped onion
2 cans ranch style beans
2 cans veg-all (do not drain)
2 cans minestrone soup
1 can Rotel tomatoes (mild)
Brown ground chuck and onion; drain. Add remaining ingredients and simmer for 45 minutes to 1 hour.
 
Taco Soup
1 pound ground beef, browned
1 can kidney beans
1 can veg-all
1 large can tomato sauce
1 can stewed tomatoes, diced
1 can whole corn, drained
1 can green beans, drained
1 can diced Rotel
2 cups water
1 pkg dry ranch dressing
1 pkg dry taco seasoning
Combine all ingredients in crockpot and let cook on high for 30 minutes. Serve with tortilla chips.
 
Ramen Cabbage Salad
1 head cabbage, shredded
4 green onions, chopped
1 pkg Ramen noodles, uncooked
4 teaspoon sugar
6 tablespoons vinegar
1/2 teaspoon pepper
1 cup sesame oil
1 teaspoon salt
Flavor packet from noodles
2 tablespoons sesame seeds
1/2 cup slivered almonds
Combine cabbage, onions, and uncooked noodles in large bowl with cover. Mix sugar, vinegar, pepper, oil, salt, and flavor packet for the dressing. Toast almonds and sesame seeds in a dash of sesame oil. Toss all ingredients when ready to use.
