4 1/3 cup water
1 1/4 cup quick-cooking grits, uncooked
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/4 cup shredded Swiss cheese
1/2 teaspoon salt
1/4 cup butter
1-1/2 cup shredded Cheddar Cheese
3 eggs, beaten
Bring water and 1/2 teaspoon salt to a boil. Stir in grits, return to boil. Cover, reduce heat and cook for 5 minutes. Stir in 1/4 cup butter, 1-1/4 cup cheddar cheese, 1/4 teaspoon salt, and pepper. Set aside and cool 15 minutes. Stir in beaten eggs. Pour half of grits into greased baking dish. Sprinkle Swiss cheese over top. Spoon remaining grits over cheese. Cover and bake at 350 degree for 1 hour. Uncover and sprinkle with remaining cheddar cheese. Bake uncovered 5 minutes. Yield: 8 to 10 servings.
