Pumpkin Cookies
1 cup sugar
1/2 cup shortening
1 cup pumpkin
1 egg
1 1/2 teaspoon salt
1 1/2 cup all-purpose flour
1 1/2 teaspoon baking powder
2 teaspoon cinnamon
1 teaspoon vanilla
1 teaspoon baking soda
Cream sugar and shortening, add pumpkin and egg and mix well. Mix dry ingredients together and add to the pumpkin mixture, blending well. Roll dough by teaspoonful and place on cookie sheet. Bake at 350 degrees for 15-20 minutes. Frost after cooled with vanilla frosting, if desired.

Sweet Potato Pie
3 cups cooked sweet potatoes
1 1/2cup sugar
2 eggs, beaten
1 1/2 teaspoon nutmeg
1 tablespoon vanilla
1/2cup butter
1 small can evaporated milk
Mash cooked sweet potatoes while warm; add butter and sugar and mix well. Add the beaten eggs, evaporated milk, vanilla and nutmeg to the potato mixture. Mix until smooth, if too stiff, thin with a little milk. Pour the mixture into an unbaked pie shell. Sprinkle top with sugar to glaze. Bake at 425 degrees for 10 minutes; reduce heat to 350 degrees and bake about 40 minutes more or until an inserted knife comes out clean.

Caramel Corn
2 cups brown sugar
2 sticks butter
1/2 cup white Karo syrup
1/2 teaspoon soda
Melt butter, add sugar and syrup; boil 1 minute. Set off stove, add soda and stir. Pour over 2 gallons popped corn. Put in roasting pan and bake 1hour 250 degrees. Stir every 15 minutes.
