Smothered Steak and Potatoes
1 (1 1/2 pound steak
2 (15 oz.) cans whole new potatoes, drained
1 (10 oz.) can golden mushroom soup
1 (1 oz.) packet dry onion soup mix
1 1/2 cup milk
Preheat oven to 325 degrees. Cut steak into serving size pieces and brown in skillet with a little oil on high heat. Transfer to sprayed 9 x 13 inch baking pan and place potatoes over steak. In saucepan combine mushroom soup, dry onion soup mix and milk and heat just enough to be able to mix well. Pour over steak and potatoes. Cover and bake for 50 minutes. Serves 6

Savory Rib Roast
1 tablespoon dried thyme
1 teaspoon dried rosemary, crushed
1 teaspoon rubbed sage
1 teaspoon pepper
1 (6 pound) beef rib roast
Preheat oven to 350 degrees. Combine thyme, rosemary, sage and pepper in small bowl and rub over roast. Place roast, fat-side up, on rack in large roasting pan. Bake for 2 hours to 2 hours and 30 minutes or until meat reaches desired doneness (rare is 140 degrees, medium is 160 degrees and well done is 170 degrees). Remove roast to a warm serving platter and let stand for 10 minutes before slicing. Serves 6-8

Ham Quesadillas
2 cups shredded ham
1/2 cup chunky salsa
2 teaspoons chili powder
3/4 cup whole kernel corn
8 large whole-wheat tortillas
1 (8 oz.) package shredded Mexican 4 cheese blend
In large bowl, combine shredded ham, salsa, chili powder and corn. Spread mixture over 4 tortillas to within 1/2 inch of edge. Then sprinkle cheese on top. Top with remaining tortillas and cook (1 quesadilla at a time) on medium high heat, in large non-stick skillet about 5minutes. Turn after 2 minutes or until light golden brown. Cut in wedges to serve and serve with pinto beans and guacamole. Serves 4-6

Praline Ham
2 (1/2 inch) thick ham slices, cooked
1/2 cup maple syrup
3 tablespoons brown sugar
1 tablespoon butter
1/3 cup chopped pecans
Preheat oven to 325 degrees. Bake ham slices in shallow pan for 10 minutes. Bring syrup, brown sugar and butter in small saucepan to a boil and stir often. Stir in pecans and spoon over ham. Bake for additional 20 minutes. Serves 8
