Mashed Potatoes Supreme
1 (8oz.) package cream cheese, softened
1/2 cup sour cream
2 tablespoons butter, softened
1 (.04oz.) packet ranch salad dressing mix
6-8 cups cooked warm instant mashed potatoes
Preheat oven to 350 degrees. Beat cream cheese, sour cream, butter and dressing in a bowl. Add potatoes and stir well. Transfer to 2 quart baking dish and bake for 25 minutes or until thoroughly hot. Serves 6
Turkey Casserole
1 (6oz.) package herb-seasoned stuffing mix
1 cup canned whole cranberry sauce
6 (1/4-inch thick) slices deli turkey
1 (15oz.) jar turkey gravy
Preheat oven to 375 degrees. Prepare stuffing according to package directions. In medium bowl, combine prepared stuffing and cranberry sauce and set aside. In buttered 9x13 inch baking dish, place slices of turkey and pour gravy over turkey. Spoon stuffing mixture over casserole. Bake about 15 minutes or until hot and bubbly. Serves 4.
Fantastic Fruit Salad
2 (11oz.) cans mandarin oranges
2 (15oz.) cans pineapple chunks
1 (16oz.) carton frozen strawberries, thawed
1 (20oz.) can peach pie filling
1 (20oz.) can apricot pie filling
Drain oranges, pineapple and strawberries. Combine all ingredients and fold together gently. (If you like, add 2 sliced bananas to salad.) Serves 8 to 10.
