Chocolate Triple Layer Pie
2 cup cold milk
2 (4 oz.) pkg chocolate instant pudding
1 graham cracker pie crust
1 (8 oz.) container cool whip
Pour milk into a large bowl. Add pudding mixes. Beat with wire whisk one minute. (Mixture will be thick.) Spoon 1 1/2 cups pudding mix into crust. Gently stir 1/2 of cool whip into remaining pudding. Spread over pudding in crust. Top with remaining cool whip. Refrigerate 4 hours or until set.
Tamale Pie
1 1/2 lb ground beef
1 onion, chopped
1 cup yellow corn meal
1 cup water
1 can tomato sauce and 1 can water
1 can cream-style corn
1 teaspoon salt
Dash of pepper
1 tablespoon chili powder
Brown meat. Add onion and cook until tender. Mix in large bowl all ingredients and add to meat mixture. Cook, covered 1 hour.
Spanish Rice with Beef
3 teaspoon shortening
3/4cup rice
1 clove garlic
1 onion sliced
1/2 cup chopped green pepper
1 lb ground beef
1 teaspoon salt
1/4 teaspoon pepper
1 can tomatoes
Melt shortening in skillet. Add rice and cook until well browned, stirring constantly. Add next 4 ingredients and brown. Remove garlic. Add salt, pepper and tomatoes. Cover and simmer 20 to 25 minutes or until done.
