Frosted Carrot Cake
1 cup firmly packed brown sugar
2 eggs
3/4 cup buttermilk
1 (8 oz.) can crushed pineapple, drained
2 cups grated carrots
1/3 cup raisins
3 tablespoons vegetable oil
2 teaspoons vanilla extract
1 1/2 cups all purpose flour
2/3 cup wheat flour
2 teaspoons baking soda
2 teaspoons cinnamon
1/4 teaspoon salt
Vegetable cooking spray
Combine first 8 ingredients in a large bowl; stir well. Combine flours and next 3 ingredients: stir into brown sugar mixture. Pour into 9x13 pan coated with cooking spray. Bake at 350 degrees for 30 minutes. Let cool completely. Spread with frosting. Cover and chill. Cut into squares.
Orange Cream Cheese Frosting
1/2 cup cottage cheese
1 (8 oz.) cream cheese, softened
2 teaspoon vanilla
1 teaspoon ground grated orange peel
1 cup sifted powdered sugar
1 teaspoon orange flavoring
Process cottage cheese in a food processor until smooth. Add cream cheese, orange rind, vanilla and orange flavoring. Process until smooth. Add powdered sugar. Stir until smooth. Spread evenly over cake.

Beef Cheese Ball
3 (8 oz.) cream cheese softened
4 or 5 green onions, chopped
2 (2 1/2 oz.) Armour Dried beef
1 tablespoon Accent
2 tablespoons Worcestershire sauce
Mix all ingredients together. Shape into rolls. Sprinkle with paprika. Chill. Serve with wheat thins.

Frozen Strawberry Margarita Pie
1 1/2 cup finely crushed pretzels, divided
1/4 cup sugar
1/2 cup margarine, melted
1 can strawberry fruit filling
1/2 to 2/3 cup thawed frozen margarita mix
1 (8 oz.) container frozen whipped topping, thawed
Grease 9 inch pie plate. In medium bowl, combine 1 1/4 cups of pretzels, sugar and margarine. Mix well. Press evenly onto bottom and up sides of prepared pie plate to form crust. Combine strawberry filling and margarita mix. Fold into whipped topping in medium bowl. Spoon into crust. Sprinkle with remaining pretzels. Freeze until firm, about 2 hours. Before serving, remove pie from freezer and let stand 30 minutes at room temperature to soften slightly.

Blackberry Cobbler
1 quart blackberries, sweetened
1 stick margarine
1 cup flour
1 cup sugar
1 cup milk
Melt margarine in 11x8x2 baking pan. Mix flour, sugar and milk. Pour evenly over margarine. Pour berries that you have sweetened to taste over crust evenly. Bake at 350 degrees about 30-35 minutes or until crust is browned. The crust will come to the top.
