Green Apple Pie
3 cup peeled and sliced green apples
1 cup sugar
1/2 stick margarine
Cinnamon to taste
Crust for bottom and top
Put apples in crust. Add sugar and cut up margarine overall. Sprinkle a little cinnamon on top. Put top crust on pie. Poke holes in top crust. Bake at 350 degrees until done.
Macaroni Salad
1 qt mayonnaise
1/2 cup pickle relish
6 tablespoons vinegar
1 1/2 cup water
3/4 teaspoon grated onion
1 1/2 teaspoon salt
3/4 teaspoon dry mustard
1/2 teaspoon sugar
Combine mayonnaise, pickle relish, vinegar, water, onion, salt, dry mustard and sugar. Toss with 2 pounds elbow macaroni, which has been cooked and drained. Add 1/2 cup chopped pimento. Makes 10 pounds.
Simple Chicken Salad
3 cups chicken breast halves, cooked finely chopped
1 1/2 cup chopped celery
1/2 cup sweet pickle relish
2 hard-boiled eggs, chopped
3/4 cup mayonnaise
Combine all ingredients and several sprinkles of salt and pepper. Serves 6-8
Turkey Noodle Salad
1 (3oz.) package oriental-flavor ramen noodle soup mix
1 (16oz.) package finely shredded coleslaw mix
3/4 pound deli smoked turkey, cut into strips
1/2 cup vinaigrette salad dressing
Coarsely crush noodles and place in bowl with lid. Add coleslaw mix and turkey strips. Combine vinaigrette salad dressing and seasoning packet from noodle mix in small bowl. Pour over noodle-turkey mixture and toss to coat mixture well. Refrigerate. Serves 6-8
Meatloaf Tonight
1 1/2 pounds lean ground beef
1 (10oz.) can golden cream of mushroom soup
1 (10oz.) can cream of celery soup
1 (1oz.) packet savory herb-garlic soup mix
1 cup cooked instant rice
Preheat oven to 350 degrees. Combine ground beef, both soups, dry onion soup mix and cooked rice. Place on sprayed 9x13-inch baking pan and form into loaf. Bake for 45-50 minutes or until loaf is golden brown. Serves 8.
Steakhouse Stew
1 pound boneless beef sirloin steak, cubed
1 (15oz.) can stewed tomatoes
1 (10oz.) can french onion soup
1 (10oz.) can tomato soup
1 (16oz.) package frozen stew vegetables, thawed
Cook steak cubes in skillet with a little oil until juices evaporate. (Sirloin steak will cook and get tender fairly fast.) Transfer to soup pot. Add 1 cup water, tomatoes, soups and vegetables and start boiling. Reduce heat to low and cook on medium for about 15 minutes or until vegetables are tender. Serves 4-6.
