Macaroons
2 eggs
Pinch salt
3/4 cup sugar
1 (6 oz.) package chocolate chips
1 teaspoon vanilla
1 teaspoon lemon peel, grated
1/2 cup flour
1 tablespoon melted butter
2 cups flakes coconut
Beat eggs and salt until foamy. Gradually add sugar; continue beating until thick and ivory colored (5-7 minutes). Fold in flour and butter. Stir in coconut, chocolate chips, lemon rind and vanilla. Drop dough by rounded teaspoonfuls onto lightly greased and floured cookie sheet. Bake at 325degrees for 12-15 minutes, or until lightly browned. Cool for 1 minute. Remove from cookie sheet.
Ice Box Cookies
2 cups brown sugar
1 cup butter
1 teaspoon soda
2 eggs
1 teaspoon salt
3 1/2 cup all purpose flour
1 teaspoon baking powder
A little cinnamon
2 teaspoon vanilla
1 cup chopped nuts
Cream butter and sugar, all eggs separately and mix well. Combine all dry ingredients and add to creamed mixture. Add vanilla. Mix well and roll in a long slender roll. Wrap with waxed paper and place in refrigerator. When needed slice and bake.
Hello Dolly Cookies
1/4 cup butter
1 cup graham cracker crumbs
1 cup butterscotch bits
1 cup coconut
1 cup chocolate chips
1 cup chopped nuts
1 can sweetened condensed milk
Melt butter in 9x13 pan, tilt to cover. Sprinkle graham cracker crumbs over butter. Layer in this order: butterscotch chips, coconut, chocolate chips and nuts. Pour milk over top. Do Not Stir. Bake at 350 degrees for 30-35 minutes or until lightly brown around edges.
Heath Bars
Soda crackers
2 sticks butter (not oleo)
1 cup firmly packed brown sugar
1 bag milk chocolate chips
Place tin foil over a cookie sheet and spray with Pam. Place a layer of soda crackers in pan. Mix butter and brown sugar and bring to a boil. Boil rapidly for 3-4 minutes, stirring constantly. Pour this mixture over crackers. Place in hot 400 degree oven for 10 minutes. Remove and pour chocolate chips on top and allow a few minutes for melting. Spread over the top completely and cool. Place in refrigerator and continue to cool for 2-3 hours. Remove from tin foil and break apart.
Muddy Water Punch
4 tablespoons instant tea
Dissolve in one quart of boiling water.
Add: 2 cups sugar. Let cool.
Add: 1 small can frozen lemonade.
1 small can frozen orange juice.
Enough water to make a gallon.
Refrigerate.
Basic Berry Pie
3 cups fresh berries
2/3 cup sugar
2 tablespoon cornstarch or 4 tablespoon flour
Pinch of salt
1 tablespoon butter
Mix dry ingredients. Fill pie crust with berries and sprinkle dry ingredients over berries. Dot with butter. If deep dish pie, wrap crust over top; if regular pie, use a second crust on top. Bake 40-50 minutes at 400 degrees.
Pimento Cheese
1 lb Velveeta cheese
1 lb American cheese
2 jars pimentos,shredded or cut
Miracle Whip
Grate cheese; add pimentos and Miracle whip to desired consistency. Mix well.
