1 1/2 cups dark brown sugar, packed
1 cup butter
2 eggs
2 cups sifted all purpose flour
2 teaspoon baking powder
1 cup salted peanuts
1 cup quick oats, uncooked
Beat together sugar, butter, and eggs until creamy; add flour and baking powder,mix well. Stir in peanuts and oats. Drop by spoonfuls on foil lined cookie sheet. Bake at 375 degrees for 10-12 minutes. Cool. Frost with peanut frosting
Peanut frosting:
Mix 3 cups confectioner’s sugar with 1/3 cup milk. Blend in 1/2 cup peanut butter. Mix until smooth. Spread on cookies.
Potato Chip Cookie
1 cup brown sugar
1/2 teaspoon salt
1/2 teaspoon soda
1 cup sugar
2 cups quick oats
2 cups flour
1 cup chopped nuts
1 cup shortening
2 cups crushed potato chips
2 eggs
1 teaspoon vanilla
Cream sugars and shortening; add eggs and vanilla. Sift dry ingredients together and add to creamed mixture. Add nuts, chips and oatmeal. Drop by teaspoons onto ungreased cookie sheet and mash down. Bake at 375 degrees for 12-15 minutes. For variations, add chocolate chips, dates or raisins. Makes approximately 10 dozen cookies.
Seven Layer Cookies
1 stick butter
1 cup graham crackers, crushed
1 cup shredded coconut
1 (6oz.) chocolate chips
1 (6oz.) butterscotch chips
1 can sweetened condensed milk
1 cup chopped nuts
Melt butter in 9x13x2 inch pan, making sure all sides and bottom are covered. Sprinkle graham cracker crumbs evenly over the bottom of pan. Cover with coconut. Sprinkle chocolate chips and butterscotch chips over coconut. Drizzle condensed milk over chips. Top with nuts. Bake in pre-heated oven at 350 degrees for 30 minutes. Cool and cut into squares. Makes about 3 1/2 dozen cookies.
Baked Steak
1 large sirloin steak
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup ketchup
3 tablespoons Worcestershire sauce
1/2 cup butter, melted
1-3 tablespoons lemon juice
1 clove garlic minced
1 (4oz.) can sliced mushrooms
1 large onion, sliced
Place meat in shallow roasting pan; brown under broiler. Season meat with salt and pepper. Combine all other ingredients, except onion; pour over meat. Arrange onion slices over meat. Bake, uncovered, at 350 degrees until desired doneness of steak.
Sausage and Vegetable Casserole
1 lb. sausage, browned
1 small onion, chopped and sautéed
1 pkg Broccoli, carrots, and cauliflower (cooked, directions on package)
1/2 cup shredded sharp cheese
1 (5oz.) Tomato sauce
Place cooked sausage in casserole dish; place vegetables on top. Cover with sharp cheese and tomato sauce. Sprinkle with Parmesan cheese. Heat in over at 350 degrees for 25-30 minutes.
Sausage Links Over Rice and Gravy
1 pkg sausage links
1 can mushroom soup
1 1/2 cup water
1/4 teaspoon thyme
1 teaspoon parsley flakes
1/2 teaspoon onion powder
2 cups instant rice
Brown sausage, drain. Add soup, water and seasonings. Bring to a boil, then add the rice. Simmer 2 minutes, cover and remove from heat. Let stand 10 minutes. Serve immediately
